3 c. old-fashioned oats
1 c. sliced or chopped raw nuts
1/2 c. wheat germ
2/3 c. honey
2 t. vanilla extract
1/4 t. coarse salt
2 T. brown sugar
2 T. vegetable oil
1 t. cinnamon
1 1/2 c. chopped dried fruit

Preheat the oven to 350. Prepare two 12-cup muffin tins with paper liners.

Spread the oats and nuts on a baking sheet and bake for 10 minutes, stirring once or twice. Remove from oven and transfer to a large bowl. Let cool for 10 minutes.

Add the wheat germ, honey, vanilla, salt, brown sugar, vegetable oil and cinnamon to the oat-nut mixture. Stir thoroughly. Mix well. Add the dried fruit and mix again.

Spoon the mixture into the muffin tins. Using a second muffin tin, press the granola down firmly so that it’s well packed. If you don’t have an extra muffin tin you can use the bottom of a measuring cup or small glass.

Bake for 20-30 minutes, or till golden brown. Cool completely before removing the liners. Store in an airtight container.
