Cool Island Soup

Cool island soup, as its name suggests, is a chilled fruit soup and an ideal refreshment for hot summer days. It consists of pineapple, cantaloupe, papaya, apricot, sparkling water, and fresh lime juice. It is recommended to cool the combination of puréed ingredients for at least four hours before serving.

Garnished with fresh mint leaves, sweet and cold, it is the locals' favorite, consumed widely throughout the island.

Sopi di pampuna

Sopi di pampuna is a flavorful pumpkin soup from Aruba that is commonly consumed throughout the Caribbean islands. Apart from pumpkin, other key ingredients in the soup are salted beef, heavy cream, cinnamon, Tabasco sauce, and vegetables such as onions, celery, leeks, and potatoes.

The charasteristical deep orange color of sopi di pampuna is made by heating ruku seeds in hot oil, discarding them, and using the colored oil in the soup.

Giambo

Giambo is a typical Aruban dish consisting of beef, okra, and fish such as red snapper, cooked together into a thick and hearty soup. Also known as the Antillean gumbo, this flavorful Aruban version of the famous Cajun specialty is characterized by puréed okra, giving the dish its unique, slippery consistency.

It is recommended to garnish giambo with cooked shrimps.

Bonchi kora

Bonchi kora is a traditional dish originating from the islands of Aruba, Curaçao, and Bonaire. The soup consists of red kidney beans, salted meat, pork tail, onions, nutmeg, butter, garlic, and sugar. The meat is placed in water overnight in order to remove some of the salt.

On the following morning, the meat is boiled until soft. The beans and garlic are boiled and mixed with the onions, nutmeg, and meat, then simmered with butter and sugar until everything is tender and fully cooked. Once done, bonchi kora is traditionally served with bread, rice, or funchi (local polenta). 

Humkessoep

Humkessoep is a provincial Dutch soup made with string beans, potatoes, green beans, bacon, white beans, sausages, and leeks. When served in a small portion, it can be consumed as an appetizer, but when served in larger portions it is a hearty and nourishing meal in itself.
