Andorran Crema Andorrana Recipe

Crema Andorrana is a traditional dessert from Andorra, often enjoyed for its rich and creamy texture, similar to a custard or crème brûlée. This delightful dish is flavored with cinnamon and lemon, making it a perfect treat to end a meal. Here’s how to make this delicious Andorran dessert at home.

Ingredients

- 500 ml whole milk

- 200 ml heavy cream

- 150 g granulated sugar

- 4 large egg yolks

- 1 whole cinnamon stick

- Zest of 1 lemon

- 1 tablespoon cornstarch (optional, for thickening)

- Extra sugar for caramelizing (if desired)

Instructions

- In a saucepan, combine the whole milk, heavy cream, cinnamon stick, and lemon zest. Heat the mixture over medium heat until it is just about to boil. Remove from heat and let it steep for about 15-20 minutes to allow the flavors to infuse.

- In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. If you prefer a thicker crema, you can add the cornstarch at this stage and mix well.

- Remove the cinnamon stick and lemon zest from the milk and cream mixture. Gradually pour the warm milk and cream mixture into the egg yolk mixture, whisking continuously to prevent the eggs from curdling.

- Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon or spatula. Cook until the mixture thickens enough to coat the back of the spoon (about 5-10 minutes). Be careful not to let it boil.

- Once thickened, strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps. Allow it to cool slightly before transferring it to individual serving dishes or ramekins.

- Cover the dishes with plastic wrap and refrigerate for at least 2-3 hours, or until fully chilled and set.

- If you want a caramelized top, sprinkle a thin layer of granulated sugar over the chilled crema. Use a kitchen torch to caramelize the sugar until it forms a golden crust. Alternatively, you can place the dishes under a broiler for a few minutes, watching closely to prevent burning.
