Chocolate Filled Pancakes
If you want your pancakes to have a secret centre, try chocolate buttons in the batter!
Ingredients
1 x 119 g bag of giant chocolate buttons
3 large eggs
200 ml (7 fl oz (⅓ pint)) whole milk
200 g (7oz) self-raising flour
1 tsp. baking powder
1 tbsp. caster sugar
1/4 tsp salt Unsalted butter, for frying
Directions
Place the bag of giant chocolate buttons in the freezer to chill for 30min.
Whisk the eggs and milk in a jug until well combined.
Place the flour, baking powder, sugar and salt into a large bowl. Create a well, pour in the egg mixture and whisk until combined.
Put a large solid non-stick frying pan over a medium-high heat. Add 1tsp of the butter and heat until it shimmers. Pour in 2tbsps of the batter and stack 3 chocolate buttons into the centre of each pancake and cover with a further 1tbsp of batter. Continue to cook for 2min, until the underside of the pancake is golden, then carefully flip and cook the pancake for a minute.
