Ask your butcher to take away the fat and the outer membrane and to halve them and cut out the white sinew inside, but buy whole kidneys and ask the butcher to prepare them according to your instructions rather than buying chopped kidneys (they begin to lose their flavour).”

You will need;
Ingredients
1/2kg Ox-Kidneys
1 onion chopped
1 tbsp cooking oil
2 tbsp tomato paste or 1 large Tomato
1 beef stock cubes, crumbled
Bell Peppers
Seasoning spices of your choice
Instructions
Soak the kidneys in salty water to get rid the urea smell.In order to get rid of any bitterness of ox, beef and pig kidneys, the recommendation is to either salt them for about half an hour and then rinse; or to soak for a couple of hours in salted water or to soak them in milk
Cut your kidneys into small pieces and wash
Add 2 tablespoons of cooking oil in a saucepan/pot and heat
Add the kidneys pieces one by one and sprinkle some salt
Cover the pot
Let it cook for about 15-20 minutes
Add a tablespoon of cooking oil and let it fry while stirring continuously for about 10 minutes
