Dorayaki Recipe

Dorayaki is a classic Japanese dessert that consists of two small, round pancakes made from a mixture of flour, sugar, and eggs, typically filled with sweet bean paste, fruit, or ice cream. The name "dorayaki" literally translates to "gong cake," which refers to the shape of the dessert resembling a gong drum. In this article, we will guide you through the process of making delicious dorayaki at home using a traditional Japanese recipe.

Ingredients:

For the dorayaki batter:

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup milk

1 large egg

1/4 teaspoon matcha powder (optional)

For the sweet bean paste filling:

1 cup azuki beans, cooked and mashed

1/4 cup granulated sugar

1/4 cup water

Instructions:

Step 1: Prepare the Dorayaki Batter

In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. In a separate bowl, whisk together the milk, egg, and matcha powder (if using). Gradually add the wet ingredients to the dry ingredients and mix until smooth. The batter should still be slightly lumpy.

Step 2: Rest the Batter

Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least 30 minutes. This will allow the flour to absorb the liquid ingredients and the baking powder to activate.

Step 3: Cook the Dorayaki

Heat a small non-stick pan or a cast-iron skillet over medium heat. Using a ladle, scoop a small amount of the batter into the pan and tilt the pan to evenly coat the bottom. Cook for 2-3 minutes, until the bottom is lightly browned. Loosen the dorayaki with a spatula and flip it over. Cook for another 2 minutes, until the other side is lightly browned.

Step 4: Prepare the Sweet Bean Paste Filling

In a small saucepan, combine the mashed azuki beans, granulated sugar, and water. Cook over low heat, stirring constantly, until the mixture thickens and forms a smooth paste.

Step 5: Assemble the Dorayaki

Once the dorayaki is cooked, place a small spoonful of the sweet bean paste filling in the center of one of the pancakes. Place another pancake on top to create a sandwich. Serve immediately and enjoy!
