Gubbröra Recipe
Full of savory goodness, this Swedish gubbröra recipe is a super satisfying appetizer and snack made of a creamy mix of finely chopped eggs, anchovies, potatoes, dill and caviar.
Translated literally, this is called old man’s mix.
And, if “what the old man does is always right” as the saying goes in a short story by Danish author Hans Christian Andersen, then it’s no coincidence that gubbröra is also always right!
And while we’re on the topic, this gubbrora recipe reminds me a little of Jansson from another popular Swedish recipe Jansson’s temptation frestelse.
Whom I imagine would have also loved this recipe as well, with the same ingredients – anchovies, potatoes, onions and cream.

But remember,
it’s not to be confused with IKEA Gubbröra,
a colorful silicone spatula.
After pondering why the famous IKEA spatula is called Gubbröra, it makes sense that when making this gubbröra recipe, you’ll want to make sure you can scoop up every last bit out of the bowl!
At least that’s our theory.

Ingredients in Gubbröra Recipe
Anchovies — Swedish anchovies, you can substitute other anchovies, though the flavor profile may change, it will still be delicious. You can also sub pickled herring matjesill.
Eggs — hard cooked, try this easy Instant Pot hard boiled eggs recipe
Potatoes — we used leftovers from Instant Pot dill potatoes dillpotatis
Onion — finely diced red, white or yellow onion.
Labneh — this is a substitute for cream that we love to use to reduce the calories and fat in recipes. You can always use creme fraiche if you prefer.
Dill — fresh dill, chopped fine.
Caviar — optional, can mix in some fish roe, or use a fish roe substitute such as IKEA seaweed pearls as we have done here.
Hot Sauce — optional, we like to add in a bit of Frank’s Red Hot, you can use your favorite hot sauce for a little kick!
Crisp Bread — known as knäckebröd in Sweden, or you can try it on top of a pan fried buttered bread as in toast Skagen shrimp toast.
How To Make Gubbröra Recipe
This is a perfect recipe to prepare when you have leftover hard boiled eggs and leftover cooked potatoes. Hopefully, you’ll also happen to have anchovies and dill and perhaps, if you’re really lucky, some caviar or seaweed pearls.
