ORIGIN OF ONION RINGS
The exact origin of fried onion rings is still uncertain to this day. Indeed, the culinary history of many countries includes the notion of frying vegetables. However, an English cookbook, dating from 1802, contains a recipe very similar to that of the onion fritters known today with the exception of the parmesan, included in the dough. HOW TO MAKE HOMEMADE ONION RINGS?
The number of layers contained within an onion obviously depends on the size, but also on the species chosen. Indeed, depending on the recipe, there are several types of onions with their own cooking methods, flavors and uses. But then which onion for this recipe? For onion rings worthy of the name, we use sweet onion with a yellowish skin and a very strong taste. The usual number of layers of a sweet onion varies between 8 and 12. It is then up to each person to adapt according to the number of donuts desired (1 donut = 1 slice or layer).
Once the onion(s) are in hand, peel them, cut them in half, then gently separate each ring from each other. Then, cover everything with dough or breadcrumbs, and cook according to the chosen cooking method.
Preparing donut dough
For about 20 donuts, you need 150 g of sifted flour, 2 eggs, 1 pinch of salt, 100 cl of milk and 1 tsp. oil soup. You can also use beer which will allow you to obtain a lighter, melting and softer dough thanks to the yeast naturally contained in the latter. We will then use 25 cl of beer for about 20 donuts.
In a large bowl, place the flour in a fountain, placing the egg yolks in the centre. We add the spoonful of oil, as well as the salt before mixing the center of the fountain, adding the flour little by little, then the milk until obtaining a homogeneous paste without lumps. In a second bowl, beat the egg whites, then pour in the batter and mix everything generously. Finally, all that remains is to dip each ring of onions in the batter before cooking.
The cooking method
To prepare onion rings, several cooking options are possible: in the oven, in the fryer, in the air fryer or simply classic frying in a pan. It's up to you to choose the one that's right for you.
In the oven
Start by preheating your oven to 230°C before starting to prepare your donuts. Then, all you have to do is place each onion ring on a baking sheet, covered with baking paper. Leave to cook for about 10 minutes, or until the outside is golden brown.
Without fryer
You don't have a fryer? Do not panic. They are simply fried in a pan containing very hot frying oil. Dip each slice into it and cook until the donut is golden brown, about 2 to 3 minutes. Once cooking is complete, place each onion ring on a sheet of paper towel to drain well before tasting.
