Kuindiong – South Sudanese Semolina Pudding
In her takeover, Sudanese and Sydney-based foodie Mariia shared with us her recipe for Kuindiong, a traditional dessert prepared by the Dinka people of South Sudan. Served with a few spoonsful of miok, a crumble-like topping made from butter and sugar, this dish is a sweet introduction to Sudanese cuisine.
Ingredients
For the Kuindiong
- 4 cups Water
- 500 g Natural Greek Yogurt
- 250 ml Milk
- 2 cups Fine Semolina
- 1 ½ cups Sugar
- For the Miok
- 500 g Butter (or ghee)
- 560 g Yogurt
Directions
For the Miok
- Melt the butter in a small saucepan over medium heat, then stir in the yogurt.
- Bring to boil, stirring constantly, and continue to cook for 20 minutes or until butter and yogurt separate.
