Matapa or Matapinha
Matapa is, in Mozambique, the dish made with pounded cassava leaves, cooked in a sauce based on pounded peanuts and coconut milk and seasoned with shellfish, which can be shrimp (fresh or dried) or crab.
It is usually served with xima (cooked corn flour) or white rice , the cassava leaves, preferably the youngest ones, are pounded together with garlic and piri-piri until they make a cream that they cook (without water); when the cream is almost dry, add the tomato and onion cut into pieces and the seafood and let it boil until the flavors are well blended.
Finally, add the coconut and peanut milk and let it boil, stirring constantly; then let it boil over low heat.
This is a type of cooking that can be found practically throughout sub-Saharan Africa, also using ingredients from other places outside Africa such as okra or cacana, or the leaves of foods imported from other cultures; as well as cassava.
Xiguinha
Xiguinha is a dish originally from southern Mozambique, typical of Inhambane province. From its masculine noun, the word Xiguinha has ronga origin.
This dish emerged in the 19th century, in a context where hunger plagued Mozambican families, as a way to diversify the preparation of cassava and thus improve eating habits. It is a traditional dish, often made at the wedding ceremony, with peanuts being a very important condiment. Xiguinha is prepared from cassava tubers and cacana leaves, cowpeas and cacana fruit (“Tihaka” in ronga).

This is a typical dish from the southern region of Mozambique, made from the leaves of mormodica balsamina, the scientific name of the famous cacana, seasoned with peanut and coconut milk, and is not lacking in the menu of Mozambican restaurants and hotels.
