Vegan Norwegian Fiskesuppe (Fish Soup) Recipe
Fiskesuppe is a traditional Norwegian soup, typically made with fish or seafood, but it can be adapted into a delicious vegan version with plant-based ingredients. Here’s a simple way to replicate the creamy, hearty flavors of the original without using any animal products.
Ingredients
- 2 tbsp olive oil
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 2 carrots (sliced thin)
- 2 celery stalks (sliced)
- 1 large potato (peeled and cubed)
- 1 fennel bulb (thinly sliced, optional but adds a lovely flavor)
- 1 bay leaf
- 1 tsp dried thyme or fresh thyme sprigs
- 4 cups vegetable broth
- 1 can coconut milk (for creaminess)
- 1 tbsp white miso paste (adds umami, similar to fish flavor)
- 1 tbsp lemon juice
- Seaweed flakes (like dulse or nori, for that ocean flavor)
- Salt and pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant, about 3-4 minutes.
- Add Root Vegetables: Add the carrots, celery, potato, and fennel to the pot. Stir and cook for another 5 minutes until the vegetables start to soften.
- Simmer the Soup: Add the bay leaf, thyme, and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.
- Add Creaminess: Stir in the coconut milk, miso paste, and a small amount of seaweed flakes for that "seafood" flavor. Let the soup simmer for another 5 minutes.
- Season: Add salt, pepper, and lemon juice to taste. Adjust the seasoning as needed, keeping in mind that the miso paste is quite salty.
- Serve: Ladle the soup into bowls and garnish with fresh dill or parsley for added freshness.
Optional Add-Ins
- Plant-based protein: You can add vegan seafood alternatives or tofu for more texture.
- More seaweed: For an extra boost of ocean flavor, you can add more seaweed flakes or strips.
This vegan Fiskesuppe is creamy, comforting, and packed with nourishing vegetables and subtle umami flavors that mimic the traditional seafood-rich soup. It's perfect for a cozy, plant-based meal.
