7 Dishes to Try When You Visit Azerbaijan

Azerbaijan boasts a rich culinary heritage that reflects its diverse culture and geography. When visiting this beautiful country, be sure to indulge in these seven must-try dishes that showcase the flavors and traditions of Azerbaijani cuisine.

1. Raw Vegetables & Fresh Herbs

Before diving into the main meal, you'll often be greeted with a vibrant assortment of raw vegetables and fresh herbs. The fertile soils of Azerbaijan yield cucumbers, tomatoes, and radishes that burst with flavor. Expect to see plates piled high with herbs like tarragon, purple basil, and parsley, along with pickled cucumbers, cabbage, onions, garlic, and a medley of olives. This refreshing starter sets the tone for a delightful meal.

2. Motal Pendiri

No meal in Azerbaijan is complete without cheese, and the most famous variety is motal pendiri. Made from sheep's or goat's milk (or a mix), this cheese is matured inside sheepskin and hung to dry, resulting in a crumbly, salty texture reminiscent of feta but with a more intense flavor. Pair it with fresh herbs for a deliciously simple appetizer.

3. Plov

Azerbaijan is home to over 200 varieties of plov (pilaf), making it a staple of the cuisine. This fragrant rice dish is often mixed with chicken or lamb and studded with dried fruits that plump during cooking. If you can only try one, opt for shakh plov, the national dish, which is molded into a drum shape and encased in golden pastry, creating a stunning presentation and a delightful taste.

4. Piti

Piti is a regional stew that hails from Sheki, a UNESCO-listed city with a rich history. This hearty dish features lamb, its fat, onions, chickpeas, chestnuts, plums, lamb stock, saffron, and sumac, all slow-cooked for about 12 hours in earthenware pots. When served, the broth is poured into a bowl for sipping, while the stew is mashed inside the pot. Its rich flavors make it best enjoyed with company.

5. Dushbere

Dushbere (or Dushbara) are tiny dumplings filled with lamb mince, reminiscent of ravioli or wontons in soup. These delicate morsels are served in a clear vegetable broth and are a perfect representation of Azerbaijan's culinary crossroads between Europe and Asia. The best cooks can fit a dozen of these dumplings on a single spoon, showcasing their skill and precision.

6. Çığırtma

The name çığırtma translates to "screaming," a nod to the sound made when the ingredients hit hot oil during cooking. This comforting chicken soup features tender chunks of chicken and fluffy omelette pieces floating in a vibrant broth infused with marigold and saffron. It's the ultimate version of chicken soup, perfect for warming the soul.

7. Xəngəl

Known by various spellings (xengel, xingal, or khingal), xəngəl is Azerbaijan's take on bolognese. Thick, flat wheat noodles, often made fresh and cut by hand, are served with a rich lamb mince sauce enhanced with tomato and topped with garlic-infused yogurt. This dish is accessible and satisfying, making it a favorite among locals and visitors alike.

Azerbaijan's culinary landscape is a delightful blend of flavors, textures, and traditions. From fresh vegetables and herbs to hearty stews and comforting soups, these seven dishes offer a glimpse into the country's rich gastronomic heritage. Be sure to savor each bite and experience the warmth of Azerbaijani hospitality during your visit.
