2 cups sliced hearts of palm
1 12 ounce jar marinated artichoke hearts drained and cut into pieces
2 medium tomatoes seeded and diced
Juice of 8 limes
2 tablespoons of white vinegar
1 small red bell pepper seeded and diced
½ small Serrano pepper optional
1 small red onion finely sliced
¼ cup chopped cilantro
1 teaspoon olive oil
Salt to taste
