How To Easily Make Yummy Nigerian Stir-Fry Pasta

Nigerian stir-fry pasta is a delightful fusion dish that combines the flavors of traditional Nigerian cuisine with the quick cooking style of stir-frying. This recipe is simple and packed with flavor, making it a perfect meal for any occasion. Here’s how to make it!

Ingredients

- Spaghetti (or your preferred pasta)

- Chicken breasts (sliced into thin strips)

- Corn starch (for coating the chicken)

- Sesame oil (for flavor)

- Black pepper (to taste)

- Shaoxing wine (for marinating the chicken)

- Onions (sliced)

- Spring onions (chopped)

- Mixed peppers (sliced; bell peppers work well)

- Garlic (minced)

- Carrots (julienned or sliced)

- Chilli (sliced; adjust to your spice preference)

- Soy sauce (for seasoning)

- Dark soy sauce (for color and depth of flavor)

- Oyster sauce (for richness)

- Rice wine vinegar (for a touch of acidity)

Instructions

- Boil a pot of salted water and cook the spaghetti according to the package instructions until al dente. Drain and set aside.

- In a bowl, combine the sliced chicken breasts with Shaoxing wine, corn starch, black pepper, and a drizzle of sesame oil. Let it marinate for about 15-20 minutes to enhance the flavor.

- In a large wok or frying pan, heat a tablespoon of sesame oil over medium-high heat.

- Add the marinated chicken to the hot wok. Stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the wok and set aside.

- In the same wok, add a bit more sesame oil if needed. Add the sliced onions, garlic, and chilli. Stir-fry for about 1-2 minutes until fragrant.

- Add the mixed peppers, carrots, and spring onions. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

- Return the cooked chicken to the wok with the vegetables. Add the cooked spaghetti and toss everything together.

- Pour in the soy sauce, dark soy sauce, oyster sauce, and a splash of rice wine vinegar. Toss everything well to ensure the pasta and chicken are evenly coated with the sauces. Adjust seasoning to taste.

- Once everything is heated through and well combined, remove from heat. Serve hot, garnished with additional chopped spring onions if desired.

This Nigerian stir-fry pasta is not only quick to prepare but also bursting with flavor and nutrition. Feel free to customize the vegetables or protein based on your preferences.
