Icelandic Skyr Crème Brûlée

Ingredients
- 100g of cream
- 100g of skyr
- 40g of egg yolks (about 2-3 yolks)
- 40g of sugar
- 80g of white chocolate
- Juice of ½ a lime
- 1 vanilla pod
Instructions
- Prepare the Vanilla: Cut the vanilla pod lengthwise and scrape the seeds into a saucepan. Add the entire pod to the saucepan as well.
- Heat the Cream: Pour the cream into the saucepan with the vanilla and bring it to a gentle boil over medium heat. Once it reaches a boil, remove it from the heat.
- Mix in Skyr: Scoop the skyr into the warm cream mixture and stir until well combined.
- Melt the White Chocolate: In a separate pan or bowl, melt the white chocolate gently. Once melted, pour it into the skyr mixture and stir until smooth.
- Combine Egg Yolks and Sugar: In a bowl, whisk together the egg yolks and sugar until well combined. Gradually add this mixture to the skyr and cream mixture in the saucepan.
- Add Lime Juice: Squeeze the juice of half a lime into the pan and stir to combine all the ingredients.
- Bake: Pour the mixture into individual ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake in a preheated oven at 120°C (248°F) for about 30 minutes, or until the custard is set but still slightly wobbly in the center.
- Cool and Caramelize: Once baked, remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours or until chilled. Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a crème brûlée torch to melt the sugar until it forms a crispy caramelized layer.
- Serve: Allow the caramelized sugar to cool for a minute before serving.
