Ingredients

- 500g (about 1 lb) of potatoes (preferably waxy potatoes)

- 1 medium onion, finely chopped

- 1-2 cloves of garlic, minced (optional)

- 2 tablespoons of all-purpose flour

- 1 large egg

- Salt and pepper, to taste

- A pinch of nutmeg (optional)

Instructions

- Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial for achieving crispy fritters.

- In a large mixing bowl, combine the grated potatoes, finely chopped onion, minced garlic (if using), flour, and egg. Season the mixture with salt, pepper, and nutmeg. Mix well until all ingredients are evenly combined.

- In a large frying pan or skillet, heat about 1-2 cm (about ½ inch) of oil over medium heat. You can test if the oil is hot enough by dropping a small amount of the potato mixture into the oil; it should sizzle immediately.

- Using a spoon or your hands, form small patties (about the size of your palm) from the potato mixture and carefully place them in the hot oil. Do not overcrowd the pan; fry in batches if necessary.

- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
