Creamy mashed potatoes are a beloved staple in Irish cuisine, and they can easily be made vegan without sacrificing flavor or texture. This recipe uses plant-based ingredients to create a deliciously creamy and comforting dish. Here’s how to make Irish Vegan Mashed Potatoes.

Ingredients:

- 2 pounds (900g) potatoes (Yukon Gold or Russet work well)

- ½ cup (120ml) unsweetened plant-based milk (such as almond, soy, or oat)

- 4 tablespoons vegan butter (or olive oil)

- 2 cloves garlic, minced (optional)

- Salt and pepper to taste

- Fresh chives or parsley, chopped (for garnish, optional)

Instructions:

- Peel the potatoes and cut them into evenly sized chunks (about 1-2 inches). This helps them cook evenly.

- Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

- Once cooked, drain the potatoes in a colander. Allow them to sit for a minute to let any excess moisture evaporate.
