Liche de tigre Recipe

Leche de Tigre, also known as Tiger's Milk, is a traditional Peruvian marinade used to cure and flavor ceviche. It's a citrus-based mixture that typically includes ingredients like lime juice, fish stock, garlic, onions, ginger , and chili peppers. Here's a simple recipe for Leche de Tigre:

Ingredients:

1/2 cup fresh lime juice

1/2 cup fish stock

1/2 red onion, finely chopped

1 clove garlic, minced

1 small piece of ginger, peeled and minced

1 small chili pepper, finely chopped (aji amarillo if available)

Salt and pepper to taste

Instructions:

- Combine all the ingredients in a bowl and mix well.

- Let the mixture sit for at least 30 minutes to allow the flavors to meld together.

- Strain the mixture through a fine mesh sieve to remove the solids.

- Use the Leche de Tigre to marinate your fish for ceviche, or serve it as a shot alongside your ceviche.

Please note that this recipe does not include the fish, as the Leche de Tigre is typically used to cure and flavor the fish separately. The fish is usually added to the Leche de Tigre just before serving.
