Spanish Prawn Pil Pil Tortilla Recipe

Tortilla de Patatas, or Spanish omelette, is a staple dish in Spanish cuisine. However, today we're going to give this classic recipe a delicious twist by adding succulent prawns and a spicy kick of pil pil sauce. 

What is Pil Pil Sauce?

Pil pil sauce is a traditional Spanish sauce originating from the Basque region. It's made with garlic, chili peppers, and olive oil, which gives it a spicy and aromatic flavor. The sauce is typically served with seafood, and in this recipe, we'll be using it to add a burst of flavor to our prawn tortilla.

Ingredients:

For the tortilla:

- 4 large eggs

- 1 large onion, diced

- 2 cloves of garlic, minced

- 1 large potato, peeled and diced

- 1 cup of prawns, peeled and deveined

- Salt and pepper to taste

- Make the pil pil sauce: In a small saucepan, heat the olive oil over low heat. Add the minced garlic and crushed chili peppers. Cook for 10-15 minutes, stirring occasionally, until the garlic is golden brown and the sauce has a deep red color. Season with salt to taste. Set aside.

- Prepare the tortilla ingredients: In a large bowl, beat the eggs and season with salt and pepper. In a separate pan, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

- Add the potatoes and prawns: Add the diced potatoes to the pan and cook for 10-12 minutes, or until they're tender. Add the prawns and cook for an additional 2-3 minutes, until they're pink and cooked through.

- Assemble the tortilla: In a large bowl, combine the cooked potato and prawn mixture with the beaten eggs. Stir well to combine.

- Cook the tortilla: Heat a large non-stick pan over medium heat. Add the egg mixture and cook for 5-7 minutes, or until the edges start to set. Use a spatula to gently lift and fold the edges of the tortilla towards the center.

- Add the pil pil sauce: Once the tortilla is almost set, use a spoon to create small wells in the surface. Pour the pil pil sauce into the wells, allowing it to spread throughout the tortilla.

- Finish and serve: Cook the tortilla for an additional 2-3 minutes, until the sauce is heated through and the eggs are fully set. Remove from heat and let it rest for a few minutes before slicing and serving.

Tips

i. Use high-quality ingredients: Fresh prawns and good-quality olive oil will make a big difference in the flavor of your tortilla.

ii. Adjust the heat level: If you prefer a milder sauce, use fewer chili peppers or omit the seeds and membranes for less heat.

iii. Add some smokiness: Add some smoked paprika to the pil pil sauce for a smoky flavor.
