Malaysian Butter Egg Floss Prawns Recipe

This popular Malaysian dish is a crowd-pleaser, and for good reason! The combination of succulent prawns, crispy egg floss, and rich butter sauce is a match made in heaven. Here's a simple recipe to make Malaysian Butter Egg Floss Prawns at home:

Ingredients:

- 12 large prawns, peeled and deveined

- 2 tablespoons butter

- 2 cloves garlic, minced

- 1 tablespoon grated ginger

- 1 tablespoon oyster sauce (optional)

- 1 tablespoon soy sauce

- 1 tablespoon sugar

- 1/4 teaspoon white pepper

- 2 eggs, beaten

- 1/4 cup egg floss (see note)

- Salt to taste

- Scallions, chopped (optional)

Note: Egg floss is a common ingredient in Malaysian and Chinese cuisine. It's made by cooking eggs in a wok until they're crispy and fluffy. You can make your own egg floss by beating 2 eggs with a fork, then cooking them in a hot wok with a small amount of oil until they're crispy and golden brown. Alternatively, you can use store-bought egg floss or omit it altogether.

Instructions:

- Heat 1 tablespoon of butter in a wok or large skillet over medium-high heat. Add the garlic and ginger and stir-fry until fragrant.

- Add the prawns and stir-fry until they're pink and cooked through. Remove the prawns from the wok and set aside.

- In the same wok, add the remaining 1 tablespoon of butter. Once melted, add the oyster sauce (if using), soy sauce, sugar, and white pepper. Stir-fry until the sauce is bubbly and slightly thickened.

- Push the sauce to one side of the wok. Crack in the beaten eggs and scramble them until cooked through. Mix the eggs with the sauce.

- Add the cooked prawns back into the wok and stir-fry until they're well coated with the egg and sauce mixture.

- Add the egg floss and stir-fry until it's evenly distributed.

- Season with salt to taste.

- Garnish with chopped scallions (if using) and serve immediately.

Tips:

- Use high-quality prawns for the best flavor and texture.

- Don't overcook the prawns, as they can become tough and rubbery.

- Adjust the amount of egg floss to your liking. You can also omit it altogether if you prefer.
