Lohikeitto: Creamy Finnish Salmon Soup Recipe
One of the basic soups I learned from cooking school, taking into consideration I studied in Finland, is one of the local favorites that a typical Finnish household cooks ever so often is a delicious yet simple Finnish salmon soup.
It has then become a staple in my own home which I make as often as I find a good piece of fresh salmon from the shops.

WHAT KIND OF SOUP GOES WITH SALMON?
There are tons of different soups where you can use salmon. For instance, this Finnish salmon soup is a typical dish from Finland where salmon, in particular, is used. You can also use salmon in chowders and other types of fish soups. It is versatile seafood that doesn’t have a strong flavor on its own!
WHAT CAN I MAKE WITH SALMON BONES?
You can make a fish stock which you can then use in various dishes such as this Finnish salmon soup, chowders, fish stews, and so on.
HOW LONG DOES FINNISH SALMON SOUP LAST IN THE FRIDGE?
If you can’t help yourself demolishing this in one day then I’d say 2-3 days maximum. Fish in general don’t last long and should be eaten fresh or latest the next day.
HOW TO SERVE THIS CREAMY SALMON SOUP?
I love a good bowl of Finnish salmon soup with freshly toasted Finnish rye bread with a dollop of butter and slices of kermajuusto (hard cream cheese) and of course, never forget to sprinkle some fresh or dry dill on top!
WHAT YOU’LL NEED

- Fresh salmon – if you can’t find it, frozen is fine also but put in mind that the texture will be a bit tougher than usual
- Potatoes – you can use any type of potatoes that are meant for soups and stews. Yukon gold is a good general use potato for this and if you’re in Finland, any potatoes in a yellow or green bag should be good for this! The red bag is starchy potatoes.
- Carrots – gives a hint of sweetness in the Finnish salmon soup
- Full-fat cream – please use full-fat, it is really a game-changer
- Bay leaves – optional but gives a really nice extra flavor
- Allspice or Pimento (maustepippuri in Finnish)
- Salt and black pepper to taste
- Lemon juice – to add a bit of freshness to the dish
- Dried or fresh dill as topping

Some people may have a different method to cook this dish but I personally like to keep it as simple as possible to keep the integrity of the dish as a quick heartwarming hot bowl of goodness that needs minimal efforts without the extra funk which I’d normally add but decided not to because this dish is honestly for either the lazies or those who like nice things but don’t want to work for it (me).
- Peel all the vegetables that need peeling and chop them into bite-sized pieces
- Slice the salmon, as well, into cubes
- Put a pot of water to boil, add all the ingredients except the salmon and the dill
- Once the potato and carrots are fork-tender, add the cream and leave it to boil for few minutes.
