Recipe: Mexican chilli bean soup with tortilla chips
MEXICAN CHILLI BEAN SOUP WITH TORTILLA CHIPS
Serves 4-6
Ingredients
2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 tsp ground cumin
2 tins (800g) chopped tomatoes
2 tins (800g) black beans
1 fresh green chilli, chopped
1 cup water
Corn tortilla chips
To serve:
Diced avocado; fresh coriander; lime wedges
Method
Heat the oil in a large pot. Add the onion and carrots, and cook for 5 minutes to soften.
Add the cumin and cook for 1 minute. Add the tomatoes, beans, green chilli and water. Bring to the boil, then simmer for 10 minutes.
Season with salt and pepper. Serve, topped with the tortilla chips, diced avocado and coriander, with lime wedges and extra chilli on the side. Read More...
