Stuffed gem squash with spinach, rice and chillies

When making a wholesome dinner or snack, you want something that’s full of flavour and a bit different. Gem squashes are small pumpkin-type vegetables also known as summer squash. They are buttery and great for stuffing with other ingredients. Our stuffed gem squash with spinach, rice and chillies is a great meal or side that goes perfectly well with a braai. With a bit of spice and cheese, you can make almost anything taste delicious.

STUFFED GEM SQUASH SUGGESTIONS

If you don’t want to cook the squashes in the microwave, you can also bake them or boil them after being cut in half. One of the old-school ways of enjoying gem squash is with a bit of butter and sugar, and maybe some sweetcorn, but this recipe takes it to a new level. Make sure not to overcook the spinach and add as much chili as you want to. You can also get a bit creative with ingredients and make your own special dinner sides.

INGREDIENTS

gem squashes (use the amount you need)

1 cup jasmine Rice

3 Spring onions, chopped

1 chilli (chopped)

200 g baby spinach

2 tbsp butter

grated Cheese (just enough for the topping)

paprika (to taste)

 

METHOD

Cook the jasmin rice according to instructions on the packet, set aside.

Cut the gem squashes in halves, spoon out the seeds. Place the squashes in a microwave dish and cook for 10 minutes on high, or until the flesh is cooked.
