Ingredients
For the Lamb and Rice:

- 2 cups plain yogurt

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add the lamb pieces to the pot, season with salt, pepper, paprika, and oregano (or thyme). Brown the lamb on all sides for about 5-7 minutes.
- Rinse the rice under cold water until the water runs clear. Drain well.
- Once the lamb is browned, add the rice to the pot and stir to combine. Cook for an additional 2-3 minutes.
- Pour in the water or lamb broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the yogurt, eggs, cornstarch (if using), and a pinch of salt until smooth and well combined.
- Preheat your oven to 180°C (350°F).
- In a large baking dish, combine the cooked lamb and rice mixture. Spread it evenly.
- Pour the yogurt sauce over the lamb and rice, ensuring it covers the entire surface.
- Place the baking dish in the preheated oven and bake for about 30-40 minutes, or until the top is golden brown and set.
