Tavë Kosi – Lamb Baked with Rice (Albanian Recipe)

Tavë Kosi is a traditional Albanian dish that features tender lamb baked with rice and a creamy yogurt sauce. This comforting and flavorful dish is often enjoyed during family gatherings and special occasions. Here’s how to prepare Tavë Kosi at home.

Ingredients

For the Lamb and Rice:

- 1 kg (2.2 lbs) lamb, cut into pieces (shoulder or leg is ideal)

- 1 cup rice (preferably short-grain)

- 2 cups water or lamb broth

- 1 large onion, finely chopped

- 3-4 cloves garlic, minced

- 2-3 tablespoons olive oil

- Salt and pepper to taste

- 1 teaspoon paprika (optional)

- 1 teaspoon dried oregano or thyme

- Fresh parsley, chopped (for garnish)

For the Yogurt Sauce:

- 2 cups plain yogurt

- 3 large eggs

- 1 tablespoon cornstarch (optional, for thickening)

- Salt to taste

Instructions

- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

- Add the minced garlic and cook for another minute until fragrant.

- Add the lamb pieces to the pot, season with salt, pepper, paprika, and oregano (or thyme). Brown the lamb on all sides for about 5-7 minutes.

- Rinse the rice under cold water until the water runs clear. Drain well.

- Once the lamb is browned, add the rice to the pot and stir to combine. Cook for an additional 2-3 minutes.

- Pour in the water or lamb broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. Remove from heat and let it cool slightly.

- In a mixing bowl, whisk together the yogurt, eggs, cornstarch (if using), and a pinch of salt until smooth and well combined.

- Preheat your oven to 180°C (350°F).

- In a large baking dish, combine the cooked lamb and rice mixture. Spread it evenly.

- Pour the yogurt sauce over the lamb and rice, ensuring it covers the entire surface.

- Place the baking dish in the preheated oven and bake for about 30-40 minutes, or until the top is golden brown and set.

- Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

- Tavë Kosi is best enjoyed warm and can be served with a side salad or crusty bread.
