The top food trends of 2023: India’s culinary experts tell us what’s going to be on our plates

Millets reign supreme, regional Indian cuisine gets innovative, nostalgia-induced food is trending and the popularity of ferments is increasing

What are we going to be eating more of this year? Which cuisines are going to be popular? What are the top food trends of 2023? From viral desserts to ingredient-driven menus and cocktails, regional Indian cuisine getting a leg-up to witnessing an uptick in communal dining and experiential formats—India’s burgeoning culinary space is constantly evolving and the discerning Indian consumer is here for it. We speak to expert chefs, restaurateurs and innovators in the food space to spotlight the top food trends of 2023 taking shape and the ones to watch out for this year. 

We’re reclaiming Indian cuisine in modern, innovative ways

This year is going to be all about spotlighting regional Indian cuisine and showcasing it in an elevated avatar. Not just that, heirloom, indigenous ingredients are increasingly making their way onto restaurant menus, be it ancient grains and millets or even lesser-known ingredients such as thangnyer or yellow Himalayan chillies, tree tomatoes, black garlic, and kaitha or elephant apple. Millets are going to be big this year, so look out for indigenous varieties, from packaged foods to being featured on local-inspired menus. 

According to Yash Bhanage, founder and COO at Hunger Inc. Hospitality which runs restaurants like The Bombay Canteen, one of the trends taking shape this year is how Indian food is becoming modern yet accessible. Customers are more well-travelled today and know what to expect, he says, pointing out some of the new dishes on The Bombay Canteen’s menu as examples where regional cuisine meets contemporary influences.
