Every year, new restaurants come and go in Houston, an ever-changing city in many ways, food included. As we look forward to trying brand-new and upcoming concepts, we can't help but notice some trends emerge. Here's a look at what's hot right now on Houston's food scene.

French cuisine makes an encore
It's hard to think of French food as trendy, but the cuisine could well follow in the footsteps of Houston's recent Italian restaurant renaissance. Chef Philippe Schmit, who calls himself the French Cowboy, and his business partner Sébastien Laval unveiled PS21 in Upper Kirby on March 9. The restaurant serves French classics like tarte flambée, tableside raclette and steak frites, and the cocktails meld flavors from cultures that have influenced the country, via Morocco, Lebanon, Vietnam and Canada.
Later this year, Eau Tour will also bring French flair to Houston. Restaurateur Benjy Levit of Local Foods fame is working on getting the bistro ready in Rice Village, adjacent to the Local Foods location there and his Lees Den bar.

Dallas moves in
