Austrian Jam Cookies Recipe

These delightful Austrian jam cookies are a perfect treat for any occasion. With a buttery base and a sweet raspberry jam filling, they are sure to be a hit! Here’s how to make them.

Ingredients

- ½ cup butter, softened

- ½ cup white sugar

- 1 teaspoon vanilla extract

- 1 egg yolk

- 1 ½ cups all-purpose flour

- ⅔ cup chopped almonds

- 1 cup raspberry jam

Directions

- In a medium bowl, cream together the softened butter and white sugar until light and fluffy.

- Add the vanilla extract and egg yolk, mixing until well combined.

- Gradually stir in the all-purpose flour until the dough comes together.

- Cover the dough with plastic wrap and refrigerate for 2 hours to firm up.

- Preheat your oven to 300°F (150°C) and grease your cookie sheets or line them with parchment paper.

- Once the dough is chilled, measure out teaspoonfuls of dough and roll them into small balls.

- Dip each ball into the chopped almonds, ensuring they are well coated.

- Place the almond-coated balls on the prepared cookie sheet, spacing them about 1 inch apart.

- Using your finger or the back of a teaspoon, make an indentation in the center of each cookie.

- Fill the indentation with raspberry jam using a teaspoon or a pastry bag.

- Bake in the preheated oven for 15 to 20 minutes, or until the cookies are golden brown.

- Once baked, remove the cookies from the pan and allow them to cool on a wire rack.
