A gift from our friends on the African continent, Cinq Centimes are sold by Senegalese street vendors. Cinq Centimes is French for “5 cents” as the cookies are shaped like a 5-cent coin. Simple and sweet, Cinq Centimes are tender vanilla sugar cookies topped with peanut butter. Uncomplicated, but addictingly delicious.
INGREDIENTS
Cookies
· 3 cups all-purpose flour*
· 1 teaspoon baking powder
· 1/4 teaspoon baking soda
· 1 teaspoon salt
· 1 cup unsalted butter, very soft
· 1 1/4 cups Imperial Sugar Extra Fine Granulated Sugar
· 1 large egg, room temperature
· 2 teaspoons vanilla extract
Peanut Butter Topping
· 1 cup peanut butter
· A few tablespoons Imperial Sugar Confectioners Powdered Sugar
· 1/4 cup toasted peanuts
· 1/4 cup chocolate chips, optional
· *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
