Homemade Onion Focaccia
Focaccia is an Italian bread enriched with olive oil and all sorts of greens and flavors. It is quite simple to make and the result is spectacularly good.
I first made focaccia a few years ago and since then I just can’t seem to find the time, even though it’s easy to make, and even though it’s very delicious.
I use a mix of white & wholemeal flour, because not everyone in my house loves wholemeal bread, and fresh yeast, which I prefer to dried.
PREP TIME: 2 hrs
COOK TIME: 30 mins
INGREDIENTS
Ingredients:
· 400 g white flour
· 100 g wholemeal flour
· 25 g fresh yeast
· 300 ml water
· 50 ml olive oil
· 1 teaspoon salt
Topping
· 2 onions
· 1/2 parsley leaves
· 4 tablespoons olive oil
· coarse salt
INSTRUCTIONS
How to make FOCACCIA WITH ONIONS:
Mix the white flour with the wholemeal flour and salt and make a well in the middle.
Heat 100 ml (3.4 fl. oz) of water slightly and add the yeast.
Leave the yeast for 10 minutes then pour it over the flour.
