Ingredients

- 2 lbs of beef or lamb, cubed

- 1 large onion, chopped

- 1 tbsp of tomato paste

- 1 cup of peanut butter

- 4 cups of chicken stock

- 2 sweet potatoes, peeled and chopped

- 2 carrots, peeled and chopped

- 2 cloves of garlic, minced

- 1 tbsp of vegetable oil

- Salt and pepper to taste


Instructions

  • -Heat the vegetable oil in a large pot over medium-high heat.
    - Add the onions and garlic to the pot and sauté until the onions are translucent.
    - Add the cubed beef or lamb to the pot and brown on all sides.
    - Add the tomato paste and stir to combine.
    - Add the chicken stock and bring to a boil.
    - Reduce the heat to low and simmer for 1 hour, or until the meat is tender.
    - Add the chopped sweet potatoes and carrots to the pot and continue to simmer for an additional 30 minutes, or until the vegetables are  tender.
    - Add the peanut butter to the pot and stir to combine.
    - Simmer for an additional 10 minutes, or until the sauce has thickened.
    - Serve hot over rice or with crusty bread.
