Ethiopian Shiro Recipe

- 2 tablespoons chopped fresh cilantro (optional)

Instructions

- Roast the spices: In a small pan, heat the cumin, coriander, turmeric, paprika, and cayenne pepper (if using) over medium heat, stirring frequently, until fragrant, about 2 minutes.

- Sauté the onions: In a large pan, heat the oil over medium heat. Add the onions and cook, stirring occasionally, until they're softened and lightly browned, about 8 minutes.

- Add the garlic and ginger: Add the garlic and ginger to the pan and cook, stirring constantly, for 1 minute.

- Add the roasted spices: Add the roasted spices to the pan and cook, stirring constantly, for 1 minute.

- Add the chickpea flour: Add the chickpea flour to the pan and cook, stirring constantly, for 1 minute.

- Add the water: Gradually add the water to the pan, whisking constantly, and bring to a boil.
