Swedish Almond Cake (Mandelkaka) Recipe

Swedish Almond Cake, or Mandelkaka, is a deliciously moist and flavorful cake made with ground almonds. It’s perfect for serving with coffee or tea and can be enjoyed plain or with a dusting of powdered sugar. Here’s a simple recipe to make your own Swedish Almond Cake at home.

Ingredients

- 1 cup (100 g) ground almonds (or almond flour)

- 1 cup (200 g) granulated sugar

- 1/2 cup (115 g) unsalted butter, softened

- 3 large eggs

- 1 teaspoon vanilla extract

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- Powdered sugar (for dusting, optional)

- Sliced almonds (for topping, optional)

Instructions

- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan (about 9 inches in diameter) or line it with parchment paper.

- In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

- In another bowl, combine the ground almonds, baking powder, and salt. Mix well.

- Gradually add the dry almond mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be smooth.
